I get how busy life gets, and once in a while, I just want a hearty meal on the plate without thinking about it, and this beauty fits that bill perfectly.
Once you bake that potato, you have a million ways to dress it up and make it more of a meal. I have a lot of options in the post, but some of my favorites include Tex-Mex, Indian, BBQ, Asian Fusion, or even a loaded Italian / Greek version.
