Weekend blueberry pancakes that are more cloud than pancake


Hi Reader -

My daughter is two and she already has strong opinions about food. She loves these pancakes — which is saying something, because I've watched her reject perfectly good food for reasons I still don't understand. She loves how fluffy they are and calls them "clouds" and that's the highest praise a toddler can give a pancake.

You blend the cottage cheese completely smooth with the eggs, Greek yogurt, and melted butter before anything else. A blender works better than a food processor. When the cottage cheese disappears into the wet mix, these pancakes come out tasting like classic fluffy blueberry pancakes.

You cannot taste it. You cannot feel it in the crumb. But each pancake has 16g of protein, which is a lot for breakfast.

Two other things:

  1. Greek yogurt adds a slight tang that keeps them from tasting flat
  2. Blueberries go in two ways — folded into the batter for flavor throughout, and pressed into the top of each pancake on the griddle so they stay whole.

Oh, these also freeze great - I make a double batch on Sunday and eat all week.
