🥧 Desserts to Steal the Show (Cyclone or Not!)

Hey there!

If you noticed my usual Saturday treats email was MIA, it’s because a bomb cyclone hit the Pacific Northwest, and, well, life got a little wild. 🌬️ Thankfully, all the trees on our property stayed strong, and other than a few days of power outages, we are all safe!

But the desserts can't wait—so here we are today, right on time to sweeten up your Thanksgiving plans!

I’ve put together a list of my favorite easy Thanksgiving desserts, guaranteed to end your feast on a high note (and maybe snag you a few compliments along the way).

🍂 This pecan pie cheesecake is the best of both worlds—pecan pie meets cheesecake in a buttery crust that’s sure to spark conversation.

🍋 Want a slice of summer for Thanksgiving? This lemon icebox pie is light, tangy, and the perfect post-feast refresher. Bonus? It’s as easy as it gets.

🎃 Want an easy and unbeatable pumpkin pie? Try this creamy twist on the ultimate Thanksgiving staple. Add whipped cream, and you’ve got dessert perfection.

🍎 More in the mood for an apple pie? Try this easy version with a Graham cracker crust. Warm spiced apples in a golden, nutty crust—basically a hug in pie form.

🍏 Need something quick and easy? This family favorite Bisquick apple cobbler has you covered, no matter how last-minute.

🍠 My favorite? This runaway hit, which is a Thanksgiving classic elevated thanks to TikTok, and I bet it'll have everyone asking for the recipe. Seriously.

Oh, and if you need a nifty pie carrier, my favorite is on sale for Black Friday! Yes, this is an affiliate link but I only share what I love!

Hope you find something here to love (or at least save room for!). Happy baking and enjoy the sweetest part of Thanksgiving!

Toodles,

Hi Reader, Quick reminder: I'm giving away a $50 Amazon gift card at the end of the month. All you have to do is leave a comment on any recipe you've made from Urban Farmie telling me how it turned out. Up to five entries per person. Takes a minute. Full rules here. But now, let's talk about Thai curries. Most home Thai curries taste flat. Mine did for years. I'd follow a recipe, simmer it forever, add more paste, add more salt — and it was fine, but it never tasted like what I'd eaten in...

An image of slicing into a stack of pancakes.

Hi Reader - My daughter is two and she already has strong opinions about food. She loves these pancakes — which is saying something, because I've watched her reject perfectly good food for reasons I still don't understand. She loves how fluffy they are and calls them "clouds" and that's the highest praise a toddler can give a pancake. But I mean, just LOOK at them You blend the cottage cheese completely smooth with the eggs, Greek yogurt, and melted butter before anything else. A blender...

Bowl of Khao Soi

Hi Reader, I took a cooking class in Koh Samui (Thailand) last November. My teacher was from Isan, but she'd learned paste-making from living in Northern Thailand — where khao soi (aka Thai curry noodle soup) comes from. She taught me two things I've never forgotten. Don't shake the coconut milk can! If you're surprised, I was too. But you basically scoop the thick cream off the top and use it to fry the paste (the same way ghee works in Indian cooking) and the fat splits in the heat and...
