Given the cold spell here in the PNW, I've whipped up a delightful vegetable lasagna recipe that I can't wait for you to try. It's easy, cheesy and meatless (and you can substitute the cheese with vegan cheese very easily!)
The lasagna has zucchini, eggplants, and spinach, so you can sneak a good dose of veggies without even knowing it. Plus, it's made with no-boil noodles, and freezes super well, so you can make-ahead and have through the week (which is always a win!)
