Spring brunch recipes for Easter and every Sunday after!


Hi Reader,

Next Sunday, we're hosting what I'm calling a "birthday-slash-Easter brunch" because baby M is turning two and I refused to do two separate events (lol). So we're just doing one very chaotic, very delicious thing and calling it a celebration.

If you're hosting Easter — or any spring brunch, because honestly, this menu works any Sunday in April — I put together every recipe worth making in one place.

Think of this as a menu to pick from, not a to-do list. Take what you need, leave the rest.

MAINS

Mushroom Wellington — The showstopper. This is what I am making, alongside this gravy and cranberry sauce for something really classic. Flaky pastry, savory mushroom filling, the kind of thing that makes people ask for the recipe before they've finished eating. Make it ahead, reheat before serving.

Eggplant Parmesan — Classic, crowd-pleasing, feeds a crowd without fuss.

Stuffed Shells with Ricotta — Italian comfort food dressed up for a holiday table. Make it the day before.

Vegan Ham — This one surprises people in nostalgia. Made with vital wheat gluten, this is a great idea if you're hosting a mixed table and want something that has the same celebratory energy as a traditional centerpiece!

SIDES

This Sweet Potato Casserole comes with a twist - it's savory, and absolutely a showstopper. Staple on any holiday table at my house.

Easy Cheesy Asparagus Casserole — Peak Easter. Spring vegetable, cheesy, crowd-pleasing.

This Carrot Casserole is also Easter apropos. No one would expect it! Or check out any of my other casseroles.

Instant Pot Garlic Mashed Potatoes — Nobody questions mashed potatoes on a holiday table.

Din Tai Fung Green Beans — The side dish that gets more compliments than the main.

SALADS

Something to balance all the richness — this roasted beet salad with goat cheese is beautiful on a spring table and takes almost no effort.

Spinach Avocado Salad with Cotija — Fresh, bright, done in 10 minutes.

Classic American Potato Salad — If you're doing a more casual Easter gathering, this is the one.

Whatever you're making this weekend — Happy Easter, happy spring, and if you also have a two-year-old running circles around your kitchen while you cook, solidarity!
