☀️ The 6 most popular dinner recipes of April

Hello Reader,

These six dinners are the ones my readers kept reaching for in April, and most of them lean hard on what's still good right now (i.e., asparagus, peas, fresh herbs, lemon).

The quick links if you already know what you want:

Here's the rundown.

Easy, cheesy asparagus casserole

Asparagus is at its peak right now, and this is the dinner that puts a whole bunch of it to work in one dish. Tender stalks, a creamy sauce, melty cheese on top.

Save this before asparagus disappears.

Green goddess pasta bake

A pasta bake that leans hard on fresh herbs. Bright and green, plays nice with whatever's wilting in your crisper drawer. Parboil the pasta, mix everything and freeze ahead for a great dinner to just "heat up" when you need.

Coconut red lentil curry

One pot, mostly pantry, comes together in 30 minutes. Lighter than a winter curry but still grounds the whole night. Great to prep in 10 minutes and cook in 30 later.

Chickpea Buddha bowl

Protein-forward, fresh, customizable. The dinner that earns its spot on weeks when nothing else feels right. This is literally on rotation in my house at least once a week.

Build a bowl that holds up.

Spicy edamame peanut noodles

Cold or warm, holds up for lunch the next day. Peanut sauce, edamame, noodles, with kid-friendly heat you can dial up.

Mushroom stroganoff

Earthy, comforting, doable on a Tuesday. Serves well over noodles or rice, and the leftovers reheat without losing the silk. And real talk, I usually serve this with rice, please don't come at me.

Try my leftover-friendly stroganoff.

If you make any of these this week, hit reply and tell me which one. I read every reply.

Toodles,
Shruthi

Strawberry cheesecake overnight oats in a glass jar topped with sliced strawberries and graham cracker crumbs.

Hi Reader, It is warm enough now that I have stopped wanting to stand over a stove at seven in the morning. Maybe you have too. So this week I went back to the breakfast I make when I want one less decision before the day starts. Overnight oats. You build it the night before, it sits in the fridge, and in the morning it is just there. No heat, no cooking, no thinking. I don't use protein powder in any of these, but you're welcome to add some on top if you want to up the protein even more. It...

Box of Indian kesar mangoes

Hi Reader, Welcome to a new Saturday email. I've been wanting to write an email like this for a long time. My emails usually contain recipes, sometimes tips and links to products I use. But this is a bit different. It's just a personal letter from my kitchen table to yours, once every week, on Saturdays. I'm imagining that you are sitting at a table and sipping coffee, reading this and nodding along, thinking of the good things from your week as well. Each week, I hope to share a few good...

Mexican Corn Ribs

Hi Reader, We’re in the Olympic Peninsula (in Washington) for Memorial Day weekend. We missed the ferry we wanted to get on by 2 cars yesterday (and they cut in line in front of us, so really we should've made the ferry, but that's a story for another day). It did feel like the ferry was full of bikes and coolers and people with very ambitious plans. Ours is quieter than that. The baby is along for the ride, which is its own kind of plan, and mostly we’re doing slow mornings, cold beaches,...
